Ingredients
- 1 lb. salmon fillets
- 1 medium red onion
- 4 portabella mushrooms
- 1/2 cup “CHAKA’S” MMM Sauce
- 1/4 cup cilantro, minced
- 2 tsp. minced garlic
- 1/2 cup bell pepper (red, orange, or yellow)
- 1 cup mayonnaise
- 1 1/2 cup salsa (mild, medium, or hot)
Preparation
Rinse mushrooms, remove stems, and pat dry.
Slice onion into 1/8 inch rings, remove center rings, & keep the 3 outer rings whole and together.
Dice center onion rings and bell peppers, set aside.
Mix salsa, mayo, & “CHAKA’S” MMM Sauce in a bowl. Add minced cilantro & garlic.
Place onions rings on heavy duty foil that is large enough to wrap fish completely. Place salmon over onion rings and fill with salsa mixture. Top with mushrooms.
Apply another layer of salsa mixture to salmon, add onions and diced bell peppers.
Wrap in foil folding all openings securely.
Place salmon on hot grill, 7- 12 minutes on each side, or bake in oven at 350 degrees for 15 minutes.
